Mashed potatoes with porcini mushrooms and cooked smoked Iberian bacon
INGREDIENTS:
- Cooked and smoked Iberian bacon
- Mashed potatoes
- Porcini mushroom
- Extra virgin olive oil
METHOD:
Fry the cooked and smoked Iberian bacon in the pan with hot olive oil until it is crispy. Make the mashed potatoes. Sautée the porcini mushroom then add them to the potatoes. Drizzle a little left over oil from the pan over the potates then top with the crispy Iberian bacon.
